Yuzu Citrus Tree

 

Yuzu, C. junos, or C. ichangensis X C. reticulata var. austera, is a small acidic citrus

fruit that originated in China but is more widely-used in Japan.  The tree is medium-sized and

spreading and is quite cold-hardy.

 

The fruits are small and round to slightly flattened, with a rind

that is thick, rough, and bumpy. Yuzu fruits are normally harvested in autumn while still green,

although the fruits eventually turn a dark yellow color.

The flesh is yellow, acidic and bitter, and

seedy.  Yuzu’s most notable characteristic is its pungent aroma.  Both the rind and the juice of

Yuzu find use in Japanese cuisine, and dried Yuzu is used as a spice.  The fruits are even used

in a ritualistic bath at Lunar New Year to ensure good health.
